An Exclusive Interview with One Sandy Lane’s Executive Chef
Behind the ultra-exclusive gates of One Sandy Lane – the Eastern Caribbean’s most luxurious enclave and our own flagship property – there’s an Executive Chef who is known for his creative culinary masterpieces. We sat down with Chef Javeir “Javy” Porte, to learn more about his professional background, culinary inspiration, and what he enjoys about working at the most prestigious villa in Barbados.    
ONE CARIBBEAN ESTATES: Tell us about your training and background. When did you develop a passion for cooking?
CHEF JAVY: 
You could say my love for cooking began at the young age of 5 when I started cooking regularly with my grandmother. I later attended the Hospitality Institute in Barbados, where I specialized in Culinary Arts. After my schooling, I gained experience by working in U.S. hotel environments –including Disney and properties in Nantucket Island, Massachusetts. These experiences opened my horizons and helped me bring back even more expertise to my field.
ONE CARIBBEAN ESTATES: What are your favourite dishes to prepare and from where do you draw your culinary inspiration?
CHEF JAVY:
 It’s difficult to name just one favourite, but what I can tell you is that I love experimenting with new ingredients in all of my cooking to create unique dishes! I also enjoy working with local Caribbean produce and adding an international flare while introducing clients to a new and unexpected fusion of flavours.
ONE CARIBBEAN ESTATES: What is your process for developing a client menu?
CHEF JAVY:
I first consider the demographics of the clients and craft it towards them to make it a very personalised experience. I can accommodate a range of dietary needs and even work with clients’ nutritionists to deliver healthy options at the highest level of service.
ONE CARIBBEAN ESTATES: What do you like most about your work?
CHEF JAVY:
I love putting smiles on my clients’ faces and cooking with a true passion –it’s very gratifying! I also enjoy creating a five-star culinary experience in Barbados that people won’t forget.
